You should sit fairly wide-legged on the ball with your feet slanted in front of you so that your knees are at an angle of about 90°. You should not have to pinch the ball with your legs to keep your balance. 
A balance ball has more stability if it is not filled to 100% but it is individual how filled you want it to be.
 
A balance ball of 650 mm fits people under 175 cm and a balance ball of 750 mm fits people over 175 cm.
